MAKING – 3 weeks before dinner
THE POTATO PEELERS
The making of Lefsa starts
with the peeling of the potatoes.
The gentlemen in this picture average 85 years old because Ed
Rustad (brown striped jacket) was 99 years old when this picture
was taken, and he sort of skewed the average. That is a lot of years
of peeling potatoes!
THE LEFSA DOUGH IS MADE AND MIXED
That which is peeled must
be turned into dough.
It’s a messy job but someone has to do it.
The dough is first rolled into balls and weighed by a group of workers
in a separate room. Then trays of these balls are brought out to
the rollers.

Never upset anyone holding a rolling pin.
After the rollers have rolled the dough out, it is “fried”
on a dry lefse grill and then brought out to the cooling and packaging
table to be cooled, packaged and inventoried!
